Don Pepe Tablia Yema Roll Dessert

Follow this recipe to make this chocolate version of the well-known Filipino Yema Roll dessert with Don Pepe Tablia Original to lift your Filipino taste, blood, and spirit!

Ingredients:

For the sponge cake:

  • Cake flour, 1 cup
  • Baking powder, 1 tbsp
  • Don Pepe Tablia Original, 1 cup
  • 4 eggs
  • White sugar, ⅔ cup

 

For the frosting: 

  • Condensed milk, 1 can
  • Unsalted butter, 3 tbsp
  • 3 egg yolks
  • Cheese (optional)

 

Instruction

For the sponge cake:

  1. Preheat the oven to 180 degrees Celsius. Grease the baking sheet, then line it with wax paper. Set aside.
  2. In a large bowl, beat the eggs and sugar until the mixture turns pale and the volume triples. 
  3. Sift flour over the egg mixture and fold it with a spatula. Pour the mixture onto the prepared baking sheet. Spread the batter using a spatula.
  4. Bake for 10 to 15 minutes. Let it cool as you prepare the yema frosting!

 

For the frosting:

  1. Place the butter in a pan. Melt using low to medium heat. 
  2. Pour condensed milk. Let it simmer for 3 minutes while stirring continuously. 
  3. Add egg yolks and continue stirring the mixture. Continue mixing for 5 more minutes or until you notice a reduction in the mixture’s volume, then set aside.

 

Assembling the cake

  1. Cut a diagonal line on one of the cake’s sides. Start rolling from the side you cut the diagonal line.
  2. Spread the yema frosting evenly on ¾ of the cake with a spatula, excluding the side with a diagonal line. 
  3. Peel off the wax paper gently and use a new one to hold the rolled cake together.
  4. Store in the fridge until the roll firms. Unwrap the wax paper and add the frosting on top of the cake. You may add it with a sprinkle of cheese if you’re in for an extra flavor!
